Pitter Patter, Make the Batter
In a large mixing bowl, smoosh the bananas up and then mix in the egg, milk, sugar, salt, baking powder and extract. Mix well!
sprinkle the flour on top and now fold the flour in. Careful not to over mix. Overmixing makes rubbery pancakes. Just stir until the flour disappears :)
Fire up the grill!
Heat up your griddle, frying pan, hood of car in the summer. You want to achieve the right temperature here so that you don't burn the pancakes. You will know you have a perfect temperature when you splash some water onto the surface of the pan and the water dances around before evaporating. (Medium High Heat)
Add a dab of butter, margarine or whatever suites your fancy to the pan to prevent sticking.
Pour batter out onto the pan in ¼ cup increments.
let fry until bubbles form, then flip. Cook for an additional 60-90 seconds and serve.
continue until all the batter is gone. You should get around 16 4" pancakes.
