Instructions
Grease a 9x13" dish with canola oil. You can use a 9"x9" or a 8"x 8" but it will make twice as thick of bars.
Bars
In a large pot on low-medium heat: melt the butter.
Add the marshmallows and stir continuously until they are all melted. Once melted, remove from heat and add the salt and vanilla.
Fold in the cereal, stir until it is all coated with the marshmallow mix.
Transfer the mix into the prepared pan. Take a piece of wax paper and lay it on top, using it as a barrier between your hands and the cereal mix, press the cereal flat with your hands so that it is an even surface and compacted together.
Remove the wax paper and let the dish set up (1 hour at room temperature for about 20 minutes.
once set, run a knife along the perimeter of the pan. Turn the pan upside down on a cutting board so that it all comes out. Cut into 24 even sized squares.
Decoration
Melt the candy melts in separate bowls in the microwave. You can do this in 20 second increments. Stir after 20 seconds and repeat until liquefied. If you have old candy melts they can be stubborn to melt. The best way to help them along is not by heating them to excess but to instead add 1 teaspoon of shortening!
Lay out a couple sheets of wax paper with the wax side up. Dip each square in the chocolate and set the chocolate side down onto the paper. Let sit for about 20 minutes, once the chocolate has dried it will easily pull away from the paper.
If you wish to add a shamrock/clover to the square you can add some green melted chocolate to a plastic piping bad or ziploc bag. Cut a small hole in the tip/corner. To make the shape simply make four circles and a stem.
You can also use a fork to drizzle chocolate on top of the square and while the chocolate is still wet, scatter sprinkles on top.
Storage
Keep on the counter at room temperature in an airtight bag or container for up to 5 days. Or, Store in the same packaging in the freezer for a month.
