5Lbs Apple Wood Chips or other wood chip (Fruit Trees maple and hickory are all good.)
Ingredients
41" ThickBone-In Pork Chops
2TablespoonsTraeger Pork and Poultry RubUse less Rub if you are using another brand that has high salt content. They all vary so much - be careful.
Salt and PepperAdd if you think it is necessary
¼CupBBQ Sauce
Instructions
Brush sauce on both sides of the chops and let it set up (about 5 minutes more on the grill)Remove and let rest before serving. (chop will continue to cook while resting)
Prep
Take the Pork Chops out of the fridge 30 minutes prior to smoking and pat them dry with a paper towel. Then season both sides. Add Salt and Pepper, If desired.
Turn the Traeger or other Pellet Grill to 180°F
Cook
Place the Pork Chops on the Grates. Once the Pork Chops are on the Grates you can let them smoke for 5 minutes and then turn the temperature dial up to 450°F. They will continue to smoke while the pellet grill comes to temperature. Cook for roughly 10 minutes per side or until an internal temperature of 150-155°F is achieved.
Brush sauce on both sides of the chops and let it set up (about 5 minutes more on the grill)
Rest & Serve
Remove the Pork Chops from the grill and tent with foil for at least 5 minutes. This will give the meat a chance to relax and the juices time to redistribute through the meat resulting in a more tender, juicy bite.
