Peel the potatoes and cut into fries. Soak in Cold water for at least 30 minutes. Dry Thoroughly.

Toss fries in oil. Add seasonings, now toss well until they are evenly coated.
Cook The Fries
In a smoker this will be at 450°F for 40 minutes or until tender it really varies based on how thick you cut your fries. In a 450°F Oven, on a cookie sheet lined with parchment paper, this will be approximately 30-35 minutes. Again this will vary based on the thickness of your fries. Be sure to flip your fries over half way through cooking for crispiness.
Prepare your toppings
Grate the cheese, Dice the Pickles, Dices the onion, Mix the sauce together, Reheat the previously cooked pulled pork.
Assemble
Top the fries with drizzle of the sauce then a layer of cheese and pulled pork, then add another layer or sauce - meat - cheese. Top with onions.
