Crispy Fries seasoned like pulled pork, smother in actual pulled pork, a BBQ aioli, cheddar cheese, red onions and pickles. Its everything you want on a pulled pork sandwich - on fries. In Canada there are alot of Poutine's on menus, Pulled Pork Poutine is common. I've never ordered it because my desire is to have this exact recipe instead of gravy, cheese curds and fries. Lets make these fries a thing, I want to see them on all the menus so I can eat it on my night off from cooking too.
Ingredients
- Pulled Pork
- Potatoes
- onion powder
- garlic powder
- chili powder
- salt & pepper
- thyme
- Canola Oil
- BBQ Sauce
- Mayonnaise
- Cheddar Cheese
- Dill Pickles
- Classic Cabbage Coleslaw
Prepare the Fries
When making fries from scratch its a good idea to soak them in water for at least 30 minutes. This helps draw out the starch making them crispier. If you soak fries it is equally important to then rinse them and thoroughly dry them off with a clean kitchen towel.
Season the Fries
What really makes this dish is the seasoning on the fries. Once your fries are soaked, rinsed and dried its time to toss them in canola oil and then season them! Toss and toss and toss until they are evenly coated for a cohesive flavour.
Cook the Fries
I did these on the traeger but they will be good in the oven or air fryer as well!
Prepare the toppings
This is easiest as a dish when you have had pulled pork earlier in the week. You will already have the pulled pork made and the coleslaw ready. Leaving you to simply grate some cheddar cheese, dice the pickles, Dice the Red Onion and mix together the mayonnaise and bbq sauce. Sounds like a lot but its really simple tasks.

Loaded Pulled Pork Fries
Ingredients
Fries
- 4 Extra Large Russet Potatoes about 4 pounds (1lb/potato)
- 2 Tablespoons Canola Oil
- 1 Tablespoon Chili Powder
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Onion Powder
- ⅛ Teaspoon Thyme
- 1 Teaspoon Salt
- ½ Teaspoon Pepper
Toppings
- 1 Cup Pulled Pork
- 1 Cup Cheddar Cheese Shredded
- 3 Dill Pickles Diced
- ¼ Cup Red Onion Diced
Sauce
- ¼ Cup Mayonnaise
- ¼ Cup BBQ Sauce
Instructions
Prepare the Fries
- Peel the potatoes and cut into fries. Soak in Cold water for at least 30 minutes. Dry Thoroughly.
Season Fries
- Toss fries in oil. Add seasonings, now toss well until they are evenly coated.
Cook The Fries
- In a smoker this will be at 450°F for 40 minutes or until tender it really varies based on how thick you cut your fries. In a 450°F Oven, on a cookie sheet lined with parchment paper, this will be approximately 30-35 minutes. Again this will vary based on the thickness of your fries. Be sure to flip your fries over half way through cooking for crispiness.
Prepare your toppings
- Grate the cheese, Dice the Pickles, Dices the onion, Mix the sauce together, Reheat the previously cooked pulled pork.
Assemble
- Top the fries with drizzle of the sauce then a layer of cheese and pulled pork, then add another layer or sauce - meat - cheese. Top with onions. Broil in the oven or put the tray back on the Traeger to melt the cheese.Add Pickles and Coleslaw - Serve. Accept Praise for your awesome creation.Leave a review 🙂
