In a medium to large mixing bowl, add the water yeast and sugar. Stir to combine. Let sit for 5 minutes until the yeast puffs up. This is how you know your yeast is good to go 🙂Add in the salt, oil, and seasonings if using. Now add all the flour and work together until smoothoil the bowl you mixed the dough in and roll your ball of dough around so it is lightly covered in oil as well. Cover with a clean kitchen towel or Saran wrap.Rise until the dough has doubled in size this takes anywhere from 45minutes - 1 hour.Shape the Dough:Dust work surface with Corn Meal. This prevents the dough from sticking but doesn't give that raw dough taste and texture. Divide into two equal pieces. Roll out each piece of dough with a rolling pin until it is about 14" in diameter.
While the dough is rising prepare your toppings.
Make the Roll Ups
Preheat oven to 400°F and spray TWO 9x13" pans with cooking spray.
Top your rolled out pizza dough with sauce, then pepperoni. Now using a pizza cutter cut into 8 pieces. Just like you would cut pizza when it is cooked. If you want smaller rollups you can cut into 16 pieces. Once cut, top with shredded cheese.
Roll each piece from the outside in. Place in the pans.
