These Cranberry Apple Pecan Chicken Wraps were born out of a love of a salad with similar ingredients. This wrap is a great option for an easy lunch as you can make the mix and have it in the fridge ready to place in your wrap each day before you head off for work.

- Chicken
- Mayonnaise (and/or Greek yogurt)
- Cranberries
- Pecans
- Apples
- Celery
- Lemon Juice
- Salt and Pepper
- Baby Spinach or other leafy green
- Tortilla Wraps
How to Make Cranberry Apple Pecan Chicken Wraps
- Cook the chicken or shred/chop store bought pre cooked chicken.
- Dice the apple, toss in lemon juice
- Wash and chop the celery
- Finely chop Pecans and Cranberries together
- Mix Cranberries, apples, pecans and celery with mayonnaise and Chicken. Season.
- Lay out Tortillas, Place Spinach on each wrap and a scoop of chicken salad. Roll up and Serve.
FAQ
The best substitute is Greek Yogurt. To make it lighter but still flavourful, I recommend a 50:50 mix of Greek Yogurt and Mayonnaise. Another great alternative is sour cream or even hummus.

Ingredients
Chicken
- 2 Boneless Skinless Chicken Breast (or 3 cups shredded or chopped precooked chicken)
- ¼ Teaspoon Garlic Powder
- ¼ Teaspoon Onion Powder
- ¼ Teaspoon Thyme
- ½ Teaspoon Salt
- ¼ Teaspoon Pepper
Salad
- 1 Apple Diced
- 1 Tablespoon Lemon Juice
- 3 Ribs Celery
- ⅓ Dried Cranberries
- ½ Cup Pecans
- ¾ Cup Mayonnaise
- ½ Teaspoon Salt
- ¼ Teaspoon Pepper
Wraps
- 6 Wheat Tortilla Wraps
- 1 Cup Baby Spinach
Instructions
Chicken
- If you are cooking your chicken: Season the breasts and pan fry until cooked through. Once cooked shred or finely chop the chicken. Set aside in the fridge to cool.
Salad
- Wash and chop the apple. Toss in lemon juice in a large salad bowl. Now wash and chop the celery. I like to slice the ribs of celery length wise 2-3 times before chopping. The smaller the pieces are of each ingredient, the tastier the wraps will be as you will get a bit of each ingredient in every bite this way.Add Celery to the bowl with the apples.
- Chop the pecans and cranberries together and to the salad bowl.
- Add the mayonnaise and salt and pepper and chicken. Stir to coat everything evenly.
Assemble
- Layout the tortillas.
- Evenly divide the spinach onto each wrap and then evenly divide the chicken sald mixture.
- Roll the wrap up, cut in half and enjoy!
